Marinara sauce!

All time favourite! The marinara sauce!

It’s essentially a tomato sauce with garlic and a dash of onion, herbs and chilli flakes.. Another secret to perfecting it’s taste is optimal salt and bit of sugar.


Take about 3 to 4 tsp oil in a pan. After letting it heat a bit, add a medium size chopped onion. Not necessary to fine chop. Then add about 12 to 15 chopped garlic cloves. Sauté for about 30 sec to 1 min. We don’t have to overdo that. The garlic shouldn’t get burnt and onions also don’t need to get the classic golden brown like for other dishes.
Then add mixed herbs/oregano about 3 tsp and chilli flakes 3 to 4 tsp. These chilli flakes were homemade by grinding roasted red chillies so we needed less amount of it. If using the market ones then maybe you ll need more.
Add about 8 small to medium sized tomatoes chopped into quarters.
Stir everything well. The skin if tomatoes ll get a nice shine on a good stir. 
Add some salt and give a stir. Now cover the lid and let this cook for some time..at least 15-20 minutes or maybe more.
Stir occasionally to prevent sticking to the base. Add some water sos.
Add some sugar about a tsp or two.
This has to be cooked at least till the skin of the tomatoes starts peeling off.

Grind this after cooling it down. Can keep it a bit coarse/granular as per preference... Add more herbs, chilli flakes, salt and sugar if needed...
