Mix 2 to 3 cup atta(wheat flour), 2 to 3 tbsp curd, 2 or 3 tsp oil, salt, 1 tsp baking powder and 1 tsp baking soda. Mix these using water and make dough. (Check for softness and add ingredients. It has to be a soft dough.) Cover the dough and let it rest for around 30 mins.
Chop garlic 4 to 5 cloves, coriander. ready up sesame seeds (white or black).
Ready the dough to make dough balls using some oil on hand. Knead well.
Take some portion and make a dough ball. Use some dry atta to cover the ball.
Roll with the pin to an oval shaped naan. Make it smaller than the required size since we have to roll it further after adding other ingredients on top. P.S.: The dough is quite soft.
Add the chopped garlic pieces, chopped coriander and sesame seeds on top. Extra garlic powder can be added. Then give a roll or two so that these will stick onto the dough and will get incorporated into it.
Now EXTREMELY IMPORTANT: Flip the rolled naan carefully. Generously wet the opposite side with water. (Neither sprinkle nor flood it.) This will help it to stick to the tawa. Now transfer this to the tawa with the wet side down.
Let it cook uptil the naan rises well at low to medium flame. Move the tawa if required to adjust the flame spread.
After the rise, flip the tawa and cook the naan on high flame. Move the tawa as well rotate to cook well in the margins as well. Cook well (again as per preference of burnt flavour).
Dish out from the tawa preferably using a straight edged spatula or anything apt.
Add butter and/or garlic powder as per taste.
Serve hot.
Bon Appetite!!
