This is for the base preps.. You ll also need chutneys - green as well as brown ;) that is- coriander (& mint) chutney as well as dates tamarind chutney. The latter one is also available online if homemade is not available.
So first we need to soak the white chickpeas overnight and then boil them 4 whistles in the cooker. Also we need boiled potatoes boiled about 4 whistles..don't boil em less.. boiling a bit more would do no harm; it ll ease out the patty making..:)
We took about 1 to 1.5 cup of raw chickpeas and 4 small to medium sized potatoes.
For Chhole
Chop a large sized onion. Some to be used uncooked while serving. Puree two tomatoes.
Take two green chillies. Slice one and fine chop one. Forner for chhole and latter for patty.
Also ready a red chilli.
Both red and green chilli are optional. Can be skipped if not available or just too lazy to slice/chop.
Lemon/Amchur if available ll be good to use :)
So first heat a pan/kadhai. Add some cumin. Let it crackle a bit; careful not to burn it.
Add some asoefetida, turmeric and red chilli powder.
Then add the chopped onions, save some for later use. Stir well.
Add ginger garlic paste about 1 to 3 tsp.
Add the slit green chilli and red chilli. (Totally optional)
Stir well for a minute.
Now add about 1/2 - 1 tsp each of coriander powder, jeera powder, garam masala powder.
Stir and let everything cook well..
After the onions are nicely cooked, add the tomato puree. Stir once and then add another round of masalas. Basically we are adding masala in three rounds - in tempering, after onions and after tomatoes,
So add 1 to 2 tsp of coriander powder, 1 tsp of jeera powder, salt to taste and red chilli powder(if needed). Garam masala may be added or skipped here as per preference.
Add amchur if lemon is not available. If we have lemon then we add it towards the end. Even if neither is available, it's ok.
Stir everything and let cook for a while. Stir occasionally. Cooking this well is important.
Then add some water and cook for a minute or so.
Add any of the masala if the taste test demands. If we are adding any masala, we gotta cook it for a while again.
Then add the boiled chickpeas along with it's water (in adequate amount).
Stir well. Let cook...May cover lid for some time. Add salt sos.
Taste test and add anything if needed. Let it cook well.. Add water if needed to adjust consistency.
Add the juice of half a lemon and give good stir.
Add some freshly chopped coriander if available.
For patty
Peel the skin of the boiled tomatoes.
Add the chopped green chilli, if available.
Add salt, red chilli powder, coriander powder, jeera powder.
Mix everything well while mashing the potatoes.
Make required sized patty and shallow fry in a pan/tawa using oil/ghee.
Serve hot with onion and chutneys!!
