Methi Paratha/Thepla !!

Prep :
 
Grab a bunch of methi leaves, wash 'em well at least 3-4 times..Take out the unnecessary 'dundies' and chop and re-chop the leaves.


Then, take

2 cups of wheat flour, 1/2 cup of besan.

a pinch of turmeric
a tsp or so red chilli powder, dhania powder, jeera powder.

Salt to taste.

2-3 tbsp curd

2-3 tsp of ginger garlic paste

2 tbsp or so oil

Ajwain, after a hand crush. (optional)

Some sabut dhania, grinded. (optional)

Can add finely chopped green chillies too. (optional)

Mix all these well...

Then add some water gradually and knead the dough.
Slime it around with some oil in hand.

Keep it aside for about half an hour.


Then roll em into required sized parathas..

This makes about 7/8 medium sized parathas..

Can be roasted using oil/ghee..

Don't do it on a high flame.

Pro tip:
Pre-heat the tawa slightly before starting.
These are not very difficult or time consuming to roll, so may use two tawas simultaneosly.
Put oil after the 1st flip - on the part which is now slightly cooked.
