White sauce pasta..

 All time favv and super duper easyy!!!

Prep :

Get the pasta boiling in well salted boiled water..

May add a drop or two of oil in it..

Give a gentle stir now & then.

Veggie prep:

Chop all that u want to put in.. Red, yellow & green bell peppers, carrot..

Boil the corn for a while-about 7 to 10 minutes. Don't forget to add a dash of turmeric for colour and sugar for plumpness.

Yeah so other things to be chopped small, i mean don't chop in juliennes or chop in juliennes!!! whichever way pleases you !!!

Saute the chopped veggies like:-

Take a pan - add a tbsp or less of oil/butter -- add the chopped carrots and then after a while add the bell peppers -- stir and toss -- add some salt, pepper, oregano, chilli flakes.

Saute per pref of crunch. Lastly add the boiled corn.

Stir everything well and keep aside.


Sauce prep::

Ok by this time the pasta would be done al dente. If not, do not jump in to make this white sauce.

It gets 'malai'd' if it sits and stays still alone!!!


So for the sauce:-

the proportion goes like - for 2 tbsp of butter, u take 2 tbsp of maida and a cup or  more of milk.

So take a pan -- put 2 tbsp of butter, let it melt a bit (doesnt need to get boiled)  -- add 2 tbsp of maida - roast it well - this is v imp - the maida should not stay 'kaccha' - it ll give a nice 'shira-like' smell - the smell of roasting any flour in ghee/butter ----ok so roast well but DO NOT burn it!!! --- while roasting keep a cup of milk ready to pour  --- pour in gradually - and keep stirring simultaneously -- pour and stir simultaneously --- can pour a cup more maybe - depending on what consistency u need - keep stirring and the lumps will go away -- add salt, a bit of sugar, pepper  oregano chilli flakes et al.. -- keep stirring till you are about to get the required consistency -- add the sauted veggies - stir - add the pasta --stir -- taste -- add anything sos -- Serve <3

Pro tip:

Stirring will thicken up the sauce so know what you want.

Do Not compromise with the quantity of butter and maida.. Milk can always be decreased or increased as per required consistency and quantity.
