Prep :
This for 3 to 4 people..
For the dough:-
2 to 3 cups wheat flour -- add some salt, 1 - 2 tbsp oil, 2 - 3 tbsp curd, 2-3 pinches of baking soda, lil sugar, oregano (optional), ajwain (optional)..
Mix all these.. Use water to prepare the dough -- knead well -- generously grease some oil on hands and apply over the kneaded dough -- let it rest for about 50 to 60 minutes..
For the sauce :-
Puree -- 2-3 onions, 6 to 8 garlic cloves, 2 red chillies. (can decrease or increase as per pref).. onions if added a bit less can be compensated by adding a bit more sugar..just in case.. so dw..
Puree -- 7-8 tomatoes
Take a pan -- add some oil -- add the pureed onion-garlic-red chillies -- saute well - - let it turn slightly dark in colour -- add pureed tomatoes -- add salt -- cook well and stir -- add some sugar a tsp or two (u can always taste and add more later), ajwain 2 to 4 pinches, cinnamon 4 to 5 tsp, oregano (if available) -- mix all these well and let it all cook -- keep stirring occasionally -- taste and add whatever u need to -- cook uptil u get a nice saucy consistency..
For the veggie toppings :-
Chop onions 1 or 2 -- in broad shapes
Chop bell peppers - red green and yellow 1 each -- again in broad shapes
Boil some corn..-add salt sugar and lil turmeric.
Saute the onion and bell peppers with some oil, and salt and pepper... Can saute separately also..
For the pizza base :-
Make balls of required size and roll em into required sizes and thickness..
Thin/medium/thick crust...small/medium/large size..whatever pleases you..
Be creative if you feel like -- Roll the edges of the base and then roll em with the pin etc..
DO NOT FORGET to make holes - ample of them - with a fork before putting it on the tawa..
Now we can either half cook or make the entire pizza straight away..
For the pizza layers do like this -- sauce - cheese - toppings - some more cheese ---
Cover the tawa and see the cheese melt!!
Cook well but don't burn it..
